As you probably know by my post about tea, I love shortbread cookies. Well I found a good recipe and wanted to share it with all of you. I cannot believe how simple, yet how delicious these are. I gave my niece a sandwich bag of them and told her to share with my mother. I happened to glance at the bag sitting on the counter 15 minutes later and there was only one cookie left!  My niece shrugged and said, “They were really good!” My mom did end up getting half a cookie and she too proclaimed them to be “very good.”

Scottish Shortbread


2 cups butter
1 cup brown sugar
4 1/2 cups of flour.


Directions: Preheat oven to 325 degrees. Cream butter and brown sugar together, then mix in flour. Roll out dough on floured surface to 1/2 inch thickness. Cut into squares of use cookie cutters. Bake for 20-25 minutes.

Note: I used cookies cutters ( the Ampelmännchen cookie cutters, I got in Germany). These cookies freeze well. I made so many that I put some in my freezer and after thawing, they tasted just as fresh as when first baked.  Also, I highly recommend a silicone bakers mat for rolling out dough.
